Freshly harvested cacao beans, still coated in sweet white mucilage, are ready to begin fermentation. This sticky coating is rich in natural sugars—perfect fuel for the enzymes and microorganisms that will soon get to work. As they break down the mucilage, they generate heat and acids that trigger a transformation: the beans lose their white coating, turn brown, and begin developing the complex flavors we love in chocolate. This is where the magic begins—fermentation is the heart of fine chocola
